Any suggestions with what I can use to have less of an air gap around my pans in my barrel evaporator?

Fabricate some steel if you are able.

Fast fix if gaps are not to big, stuff some Roxul safe and sound insulation in there.

You can also use aluminum foil around the edges of the pan.

What do you think I should be able to get my boil rate to out of a drum?
