As I look on-line at different vendors for sap sacks I can't find many details about manufacturer, bag size, and especially about mil thickness.

I've noticed some costing 27-cents each and others 50-cents each.

Are there actually differences to justify the various costs, or are they all the same thickness and capacity -- and a higher vendor's mark-up?
Are the lower cost bags "good enough", or something to avoid?
I'd hate to throw my money away if there's no reason to justify it.

I haven't planned to buy enough bags this year to reach bulk quantity.

No. I have gotten sack from roths and they were
Junk. Maple hollows are slightly thicker and double seamed
On the bottom unlike roths. I'm sure there are many different manufacturers of them that vary in quality

Two years ago I had leaks in more than 1/2 of the bags I had out, what a pain that was. It turned out that Richards Maple had received a bad batch. They made good on it and last year I don't think I had one leak. The frustration is not worth saving a few cents. Can you get samples from each and put a mic on them.
