How much is a typical draw off? I have ran 425 gallons into yhis thing and only drawn off 5 quarts. This pan is hoarding my syrup. Help

That sounds right. Welcome to flue pans, takes a lot to sweeten the pan. Also depends how deep you run.

Look on the bright side. Now your pans are sweetened you will be drawing off 1 gal for every 40 in every hour or so.

I thought the same thing two week ago when I sweetened my 2x6 Hybrid . Took between 200 and 300 gallon running at 1.25 inch depth. Now I draw off each boil. Quantity is about 1 quart during a 5 minute draw off. I experienced wild temperature changes and lots of foaming in syrup pans during 1st few boils. Now that it is sweetened things have settled down nicely and I can chew thru the sap and enjoy boiling.

I've been thinking about eventually moving up to a 2x6 hybrid from the 2x4 flat pan but a little nervous. For the next several years I will be a weekend warrior and not sure if I would be able to do much in two days of boiling besides make a lot of sweet.

And at the end of the year you have about 8-10 gallons of syrup in your pans that you need to finish!

I think that answers my next question........once you have been boiling for a while, the volume left in the pan is somewhere around 10 gallons?

At 1 1/2" in the pan is close to 20 gallons. Then at the end of the season on our last boil we had a very small fire in the box and get it down 3/4" -1", then empty the evap into a finishing pan to finish and I think it ends up 8-10 gallons when all said and done! Good luck!
