I'm new to filter presses going to have about 800 taps I'm looking at a 7" 3 frame press might be a dumb question but does the syrup come out just as clean as it would with one that has 5 or 10 frames is it just how often you have to change the papers and fewer gallons pressed before it needs to be cleaned Thanks

Sounds like you have 1\2 bank press. It will filter just as good as a full bank just have change the papers more often.
I have a full bank but made spacers out of pipe so I can take out some plates when I only have 10 gal or so to filter.
You will know when it starts to plug up by the pressure build up. With A half bank you should be able to do up to 20 gal but it all depends on the sugar sand content. I use a red solo cup of filter aid per approx 5 gal syrup . just make sure its hot enough. Like so much else in syrup making do what works for you.
One thing I do know I never had clearer and cleaner syrup and will never go back to felts and prefilter papers.

Justas clean!!! nothing like a press glass proves it, syrup must be over 200, right off arch is best. you will learn the appropriate amount of aid to use, was hardest thing for me to get used to. if you use too much frames will pack too tight, if not enough junk will plug the flow.

You will want to do a test to start with so you know how much filter aide you can use before having to change papers. Set up the press. In your source container, put couple gallons of water. Stirrup in cup of filter aide and start the press recirculating back to the container. Keep adding filter aide until the pressure spikes. Tear down the press keeping the filter aide cake. Once it has dried, measure the amount that was in the press with the container you are using to scoop it with. REMEMBER THIS AMOUNT! This is all that it will ever hold. When you are filtering , it is time to change papers when this amount has been run through the press. The big variable is how fast to add it to the syrup. General rule is early season you don't need as much as late season. If you see pressure increase before your limit is reached, time to start using more filter aide per gallon?
So if your press holds 3 full scoops,, and you use 1 scoop per 5 gal, then 15 gal is all you can do before changing.
Do not try to add that little bit more for that last gallon you haven't filtered yet. It won't fit.
