I have been considering switching to a plastic bottle this year. One of my first questions is how to sanitize these things, is there a special process?

You should bottle at 180 to 190 degrees and this will "sanitize" the bottle. Make sure to lay on its side for a minute after putting the cap on to "sanitize" the cap also.
