View Full Version : What size canner?

I am planning on storing all of my bulk syrup in beer kegs, as I got a good deal on them, I was just wondering what size canner you guys would suggest?

I would find one big enough to either hot pack a beer keg or be able to empty a beer keg into to can.

16 gallon or larger is what I am looking for or will have my son build. Current canner is to small to fill our 1/2 kegs so we have a stainless milk bucket on a propane heater at temp and ready to transfer to the canner to keep the flow continues. Works ok but is not the easiest setup. I like easy when we are boiling, pressing and packing all at one time. Keep it simple and help is easy to find.

i bought a 17 gal welded ss pan and made a finisher it works great, then i picked up a leader 16x24 complete soldered canner setup and had a 16 gal ss welded pan insert made to fit inside the 16x24 pan so now i have a water jacketed leader canner and it works great. so now i pull if off the evap, into the finisher , and then run it thru the filter press into either the canner to bottle or straight into a 15.5 gal keg. with the water jacketed canner i can bottle in between firing the evap and don`t have to worry about making nitre or burning the pan. hope this helps

ok guys,could someone that owns a commercial 16x24 give me the dimensions of the filter screen(how far does it drop into the canner) and what size filter material do you use, and where is the best place to buy it? i found a local sheet metal shop that is going to build the pan and the lid for 180$!

honestly when i bought my canner used it didn`t come with the filter screen part, but from looking at the marks in my pan i would say it was 4-5 inches deep when set in there, and the filter material i don`t know. the only thing i will add is make sure you have a drain bung ( obviously) and a bung for your thermometer and when you have them make it have them use thin (22 gauge for sugaring equipment) stainless steel. otherwise it will be hard to keep the temp steady if its too thick without constant burn adjustment. the price sounds good cost me $100 for my insert pan and it was made with a sloped to the drain bottom .

Yes I am having ports welded in also, just wondering what everyone else does for filters

My 16x24 canner didn't have a screen so I bought one from Leader. It's a little over 3 inches deep.

I don't know what size the flat filters are from Leader, but you'd want one at least 24x32. That way you will have enough material to "line" the sides of the screen.

What size burner would you say I need under this, I was thinking a dual burner cast iron camp stove, or should I just buy 2 burners and build a proper stand for it?

Ok so I will be picking up the canner this afternoon, I had him make the frame for the filter, would it be ok to use expanded aluminum, or should I order stainless?122991230012301

stainless all the way, aluminum will impart a funny metallic taste to your syrup, i haven`t ever used aluminum or got that taste, but i have tasted a friends that used a large aluminum stock pot and it was not good, tasted like i had licked a penny

Amazon has them. Cheapest I found so far is Office Depot, $93.

This one was a concord, I got it on amazon for 99$ free shipping, then I cut 6 inches out of the middle of it
