We are looking to build a syrup house. I was thinking of having a 100 amp service supply its electrical needs. I will have a 600 R.O., 2.5'x10' fuel oil fired evaporator, an air compressor to run the filter press, and electric sap pump, 2 hp motor on a vacuum pump, and lights and outlets. Should I be considering a 200 amp service instead of the 100 amp service. Thanks for any thoughts on this.

Yes, SE's are like garages -- nobody ever built too big of a one.

Most definitely!! You will inevitably be adding other or larger equipment in the future and will likely want the added capacity. It is always easier and cheaper to do it right the first time than to fix it later.

I would say yes. Unless you are running wire a long way to the sugar shack the cost should not be much more "although more". The RO will be quite a draw a 600 is up near 50 amps on some models alone. Typically systems are designed to run at 80% capacity meaning 80 amps. Your not far from that right of the bat. You will not regret doing so.

My water jacket canning tank draws about 20 amps.

my house is a 100 feed my garage with 80 not a problem. only reason why i might do a 200 is for solar and i can do all the work and parts at cost.

1hp ro feed pump, 1hp high pressure pump, 1hp high pressure blower, small blower for auf, lights, pellet stove, some times a small air compressor.

get all the loads for equipment, us Licensed Electricians/Electrical Engineers can do a load calc for you.
