View Full Version : Floating whitish particle in glass

Hey experts,
Have had this a couple times. Re-cannning good syrup into glass. Heating to 195, gravity filter through paper in my canner and bottle it. After 2 weeks, noticing in the bottles what appear to be white floating particles and fuzz on bottom of bottles. Shake bottle hard it all disappears but seems cloudy? Is is mold already forming?? Niter from heating to much?? Seems as though I need to re-package it....??? thanks.

better that than mold I guess but why? Too hot canning? Not sure I want to explain that to customers though so I guess I have to re-can and filter. Will I have to aggressively filter with press now that the sand is in there?

My guess is you are reheating directly on the fire ( no water bath / steam jacket) . For filtering in glass a press works best. Not sure why you call it aggressive . What are you currently filtering through?

It is also possible the floating white is your defoamer.
I have had little floaties in the all the lithographed vmsma 1/2 gallons I have tried. Not in plain ones filled at the same time.

Do you suppose there was some foreign matter in the bottles?

aggressively meaning heating up quickly on a flat top glass stove top. I have done hundreds of bottles this way but once in a while this happens......I am thinking above comments 'on too hot' is likely my issue. I just filter through one cone paper filter....this is syrup that initially was canned during the season and filtered through a press. So it's the second canning process is my issue............very infrequent but annoying when it does!!
