I'm in the middle of building a 10x20 sugar shack (10x16 will house the evaporator) and I'm wondering what size cupola I'll need. The walls of the shack are 8' with raised-tie trusses and a 12/12 pitch roof so its pretty tall inside. The evaporator is a William Mason 2x3 Hobby XL that should evaporate 8-10 gallons an hour with a fan. Was going to build a 3'x6' cupola with 4'x1' vent doors on each side. I'm wondering if that's going to be enough....

That sounds like a good plan. That cupola should be big enough for a 2×4 evaporator. So you have room for growth.

You should be fine with a 3' x 6' cupola. The old timers used to say to match the evaporator size (2x4 for a 2x4 evaporator, 4x12 for a 4x12 evaporator etc.). Most problems with steam venting is from not allowing enough make-up air into the sugar house. Enjoy your new sugarhouse!

Got the cupola set today. Nice when you have the right tools. I owe my tree surgeon friend a gallon of syrup.

Got the siding on, windows and doors trimmed and got stain on it today. Still have to install the windows, make the three doors, make the vents and side the cupola and then I can get to work on the inside. Ran power to it last week too.

Made a window for the gable end of the shack tonight. Red glass with a led night light behind it. Kinda cool.
