Take a look at the video titled "Action packed". Not very long, but a ton of steam. We have a forced draft on it that I've tweaked a bit and once its heated up, we'll do 175 gallons an hour through it. Very happy with A+A!!

Very nice wdchuck! We just bought a 2x8 with preheater and hood, and air tight front, I'm hoping for 80 gph

You will need to really push it hard and run it shallow to hit 80 gph with a 2x8. 65 - 70 would be more realistic numbers.

Metalhead, I bought a package deal that included a 400 gallon bulk tank, 210 gallon truck tank, 3-75 gallon tanks, skimmer, thermometer, hood, preheater, air tight front. I paid 6500 for everything, the evaporator was never even assembled and it all was 20 minutes from my house
. Mellondome, I would rather not run it shallow, I will settle for a little less gph, what would you say I could expect if I add the blower?, this is a raised flue also

Do you guys think pex would be ok inside the hood where it hooks to the preheater, or won't it take the heat?

pex tubing would turn in to spaghetti with the steam. it can only hold so much heat. I would use copper.

I have an A&A 2X8. I have forced air over and under the fire. The best I got was 60GPH. 50-55 would be more realistic. I have a good boil on both pans. I love my rig. It is a great value.

I used a short piece of Pex to connect my inverted steam pipe condensate-collector-upside-down-Chinese-hat thing to the drip channel on the side of the hood. It got pretty flexible, but it did hold up.
if that is what I had, I would try it. Relatively cooler sap inside it will moderate its temperature also.
