We sell a lot of lollipops during the holiday and maple seasons, and thankfully, my mother-in-law makes them all for us, but she spends a lot of time doing it. I haven't made them before, but I guess it's a lot of small batches because the hot liquid sets up if you try doing too much at once. Is this something that can be made as a large batch, poured into molds, if it starts to thicken up, reheat it, keep pouring, repeat if needed, until done? I want to find a way to make this easier, and more efficient, for her. I figure there's got to be a better way to do it, and since we always run out, we could easily sell more.

Thanks for the help.

Cornell U. is a great resource for info on confections. My guess is that if you are getting syrup up to 300+ degrees, it will stay pourable for a very long time. Therefore, you could probably make a lot of lollipops before the batch cools down to a taffy.

No easy way to make large batches. Even when I make say 2 cups it still needs to be reheated many times before it can be poured into the molds. They are time consuming. Maple drops are even worse. A lot of time and labor. When it begins to cool I re heat in micrmicrowave

I have been able to make 50 maple leaf lollipops at once without reheating and pour the last of it into small candy molds. You just need to have everything ready when you start pouring. Possibly could get another 5 lollipops out of a batch

What type of molds do you use for the lollipops? I have seen some clear plastic ones for sale at the dealers, do they hold up to the temps?

The molds I use are white and have 5 maple leafs in each one

Sounds like we're already doing all the above, so it is what it is. I'll talk to her about her means and methods to find out more about how she's doing it.

We're using white molds of various shapes and sizes.

Thanks for the input.
