View Full Version : Accidental Maple Sugar.

It was a quiet night around the house so I decided to whip up A batch of Maple Candy, I do it by hand on the stove. After I pour the candy in the Molds I have a Habit of reheating the little chunks & pouring that into the Molds ending up with a second batch of slightly darker, more granular candies. Well I had a lot of little pieces left after the second pass so I decided to give it a third try and as I was melting the pieces/chunks down a third time it started to really bubble and get fluffy, I started to stir slightly faster & wouldn't you know it I ended up with a pot of loose granular white sugar.

Generally when I screw up it doesn't end this well. Guess It's my Lucky Day.

Magic. When we do the molded sugar, after our first batch, we just put the bulk container we are using (a large plastic measuring bowl) in the microwave to reheat the contents. It takes very little time and we don't seem to change the texture. We just put it in for 30-60 seconds, stir briefly after, and pour again.
However, if you want the maple sugar that's OK too.
