Had probably about 600 of the small maple sugar leaves to glaze, thought I would do it in one go,big mistake.Boiled about 2 gallons of syrup to 222,let it cool,then loaded in all of the sugar.My wife and I worked until 12:30 this morning from 9:30 last night "rescuing" the sugar. It was like digging for clams in a beach,wiping off a lot of sugar on each piece,probably lost about 10%, maybe more.Not the best job of glazing,but it is done.
