Will a higher steam stack increase the draft therfore pull more steam out?

How does the presure inside a hood effect evaporation?

The taller the steam stack the more draft you will get. Mine is about 11' tall. A liquid under a vacuum will boil at a lower temp than at atmospheric pressure so a draft creating a slight vacuum will make your sap boil faster.
