I just finished assemblng my new Lapierre evaporator I bought from the Maple Guys. It is a flat pan with three sections (two outer sections and one middle section. Each section runs the full 4 ft front to back It has a drawoff fitting on each side section. If you are standing in front of the unit, the right side drawoff is in the back corner near the stack and the left side drawoff is in the front corner. I assume I can flip the pan once in a while to minimize niter on any one side but which side should I be drawing off from. Front or back?

Yes you can turn it end for end. It is best to be makeing syrup where the fire is the hottest. On the front.

Just like Fred said, rotate the pan 180 degrees to keep the nitre down as needed. Did you get a pre heater pan to sit on top? If so it should also be set up so that you can add the sap on the side oposite the draw off
