A local shop makes stainless pans in 18 gage and is cheaper than most other pan suppliers. What is the advantage or disadvantage of 18 over 22 gage or vis-a-vers?

I have read that it would be slower, but I don't understand why. Once the pan is boiling wouldn't the boil rate be the same? I don't know, that's why I'm asking.

I bet you would not notice the difference. You also need to figure gph/$

I bet you would notice the difference, but likely only if you had both side by side. The reason for the price difference is not in the materials cost but in the welding. 22 ga. is more difficult to get a great weld.
The reason for the 22 being faster boiling is because SS is not good transferring heat, the thicker the slower the transfer, and 18 is thicker than 22.

22 gauge is easy to weld, just clamp the corners to a head sink with no gaps.
