Could someone explain to me what causes the sap in the back pan to get pushed to the finishing pan as the sugar content increases. I have a drop flu 2 by six d and g. There are no valves so it must have to do with density of the syrup.

Also if a rig is off level will that impact the ablility of the syrup to make it to the finishing pan?

Thanks much

Chris,

As the sugar content becomes higher, the density does as well. It gets denser and thus hotter. The hotter sap is pushed by the colder sap behing it. The flues work because hot always rises.

Also, once the evaporator is boiling good, you sorta have a constant flow all throughout the evaporator and the syrup gets more finished as it flows. It just doesn't set in each place a while, but is usually on the move constantly even if you can't see it with your eyes. It is always flowing towards the lowest spot in the evaporator which tends to be the place where you are drawing off because it is the furthest point from the intake.

With lowest, I mean lowest syrup level! :D
