If you cut all but three of the stems, it will help those three grow larger faster. It's still going to be a while before they're big enough to tap. Save the biggest stems in the best evenly-spaced triangle you can get. You might want to make it just two or even just one stem, but it probably won't make much difference in how long it takes before you can tap any of them. You'll have to keep managing every year until only the stems that you want saved stay alive. I would cut the stems you want to kill about one foot up and let them rot away over the years.

Cut it all down and use the firewood to make syrup with sap from a good maple tree!

Test the sap for sugar content first, then follow either of the previous comments depending on the result.

Read up on the research done on "tapping" saplings. You have a perfect candidate there.
