I have found by sinking 25 liter/quart pails ($2.00 from the wine makers) I can keep the sap just above freezing to prevent it going off and it also prevents it from freezing on very cold nights except for a skim of ice.11645

Snow was mostly gone for us this year before the sap started to flow. I was thinking of chopping through the ice in my pond to store there, but I just kept boiling as I gathered and that didn't fall behind enough to resort to that risk. In the future, I might deliberately make a snow pile with depressions in it for buckets. Then I'll cover that snow with saw dust. It's a great way to slow the melting of snow and ice.
