I'm finishing up my first season, so excuse a dumb question...
I pulled taps four days ago. Since then, we've had weather in the 50's and 60's. I've kept frozen water bottles in the sap barrel, and kept the barrel in a cool shed. The sap that I collected was the last of the year. I don't know if it was buddy when collected or not, so, even though I've done my best to keep it cool, I don't even know if it was good to begin with.
Before I go to the work of getting the evaporator ready just to find out that the batch is bad, is the simpler test to boil an inch or two in a pan on the stove? I don't know what "buddy" smells like.... but I'm guessing it will be obvious after I've been boiling good sap so far?

Boiling some on the stove is exactly what I would do. You will know if the sap is bad, but if it's only slightly off I would still boil it off and use the syrup for cooking.
