I'm a rookie-sapper using propane. I'd like to switch from a boiling pot to a small hotel-style steam pan. About 1 foot by 2 foot by 6" would do nicely.
Sources in Canada?

Hey 67Heaven. I got my steam trays from Dinetz (near Yorkdale).

They have several sizes of trays and their prices were really, really good.

When emptying the steam trays, do you gingerly tip them into a pot, or have you drilled a spigot into the side?

I just dump them into my pots. Actually I dump them into my jelly bag filter which is placed inside the pot. Then I bring in the filtered 'nearup' and finish on the stove. When I do that, the level of 'nearup' in my steam tray is usually around 1" deep so it's not a tricky maneuver at all.
