Newbie to tapping!

Next season I would like tap between 30 an 50 trees. I am looking at running tubing I will not have the extra cash to invest in a pump or a vacuum. What would be the best way to allow gravity to work? I think I should start on high ground and work my way down. Plus should I do the same with my taps once I start to level out? Does tap height on a tree make a difference?
