View Full Version : Anyone makemaple sap vinegar ?

I saw on here a few weeks ago that someone brought up the topic but I do not recall what the outcome was. Is this an easy process? This came to mind because I had a 5 gallon bucket of sap from last year that I forgot about in the freezer until this morning. Anyway I found that it had separated. The top was super sweet and the bottom of the bucket smelled of vinegar. It was really weird. I have never made vinegar before but would like to give it a shot if possible.

alcohol and vinegar both need good ingredients and sanitary practices. if i was gonna make either from sap, id definitely start with the freshest sap possible. natural airborne yeasts and bacteria can ruin it pretty quickly and it takes very very little of the wrong kind to make the end product taste and smell bad. if i was gonna make a maple wash, id start by bringing sap to boil, and just boil it up to the correct sugar% for what you are making. then its ready for yeast or mother to work

Sap vinegar no syrup vinegar yes.
First make acerglyn shoot for 8% alcohol google it
Put it in a mason jar add a teaspoon of Braggs cider vinegar( it has the bugs that turn alcohol to vinegar). The other vinegars are sterilized and wont help start the process.
Put a paper towel over the jar mouth to keep the vinegar flies out and allow the air in.
Wait till its vinegar. Might take a month.

I'm curious - Did it form a Mother of Vinegar (nasty looking thing that looks like an oyster without a shell - but - a must for vinegar making). I had some apple cider I forgot about and it turned into cider vinegar and formed a Mother - I should have saved it.....but - I didn't.
