This year I went from steam pans to a 24X30 flat pan. I have noticed that the niter looks like flakes floating around the pan but it breaks up when I try to remove it with the foam screen. It then reforms as flakes. Is this normal for batch boiling??? It all seems to come out on the prefilter.

I get foam sticking to the sides And occasionally take it out with a foam screen. I just consider it part of the process. Mine doesn't look like flakes though. I have a 2x3 pan and a 14x24 syrup pan . have you tried defoamer ,its amazing stuff just one drop will kill it all

This year I am not getting much foam and the burnt foam I was getting last year came out with the foam screen. At first I thought it was fly ash but it has no 'body' and collects as niter sand on the filter.
