View Full Version : Continuous boil and niter

Hey everyone. First, thanks for all of the info on the site - I've really learned a lot and have enjoyed it so far.

First year boiling on an evaporator. 2x4 mason. I have a draw on one side only. I've been boiling and draw off syrup each boil - leave the sweet in the pan until next time. I see niter starting to build up in the pan. Should I be doing anything about that? I read where you should switch draw sides but I can't.

You want to drain it an clean it once in a while if you can't change the flow. Use vinegar and hot water light scrubbing and then let I soak over night then rinse it real well works pretty good. It only gets harder to clean if you don't do it now and you run the risk of burning and you don't want that for sure. Come up with a number of boils or gallons of sap processed before you clean it and stick to it.

Do I drain everything into a pot, clean the pan, and put everything back in? I shouldn't attempt to take some of the niter or sand out?

Sorry Yes drain it all and put it back in take out the Niter as you clean it depending on how bad it is some of it will be stuck which requires soaking patience when soaking it will come off. A lot of people let it soak overnight. My Evaporator is a little bigger I drain the front pans and clean them every 75-100 gallons of syrup if I don't it only is harder to clean the next time. Come up with your own window for cleaning and stick to it and you will be good.
