Well i was making some light and sweet syrup but I have been holding it in the pan a Lil longer to make a bigger batch for the finisher only holding it till hydrometer bobs. I was being impatient and putting it in finisher pretty early when I switched it started getting darker any thoughts folks

We've made mostly dark syrup. Low sugar is part of it takes longer to get to syrup. Had some warm weather. Sap gets over 45 degrees can't make light syrup.
