What's the deal with the mini explosions occurring while boiling cream syrup??? Never had that before. Batches seems to be coming out fine when all said and done, but why is this occurring?? thanks..........

I'm getting that too. I believe it's depth of syrup and thickness. It's happening before you get to a hard boil right? I think the pressure of the syrup is keeping the early bubbles from coming up until they collect and build up enough buoyancy. And then they "pop" from the bottom. Everything rattles and makes the explosion sound.

I get the same thing too but figured it might be the pot I used that contributed to the popping. Some syrup seems to be worse than others. If it's really bad I will turn the heat down a little.
