drawing off a flat pan

hello. this is my first year using a arch and a 2x4 flat pan with a pre heater. how do I know when to draw off? tia

There are several different methods actually, but most of the time you use a combination of them.

- Syrup Hydrometer (read this (http://www.leaderevaporator.com/pdf_files/syrup-hydrometer.pdf))
- Syrup Aproning (look at this (https://c2.staticflickr.com/6/5254/5587900466_bd3380a05e_b.jpg))
- Temperature measuring (~217-219 degrees fahrenheit, depending on altitude / barometric pressure)
