How long is acceptable or common practice to have sap and some sweet in the pan before boiling again. Boiled Saturday and dont think i will get enough boil in until thursday.. worried

I leave mine in as long as it takes; sometimes a week or 10 days. As long as all the sap has been brought to a boil, all the bacteria in the sap will be killed and it will keep longer than raw sap.
If you expect a long cold spell (like what is forecast now), you back pan will likely freeze solid. I guess many people will disagree, but I boil my back pan down as low as I dare (maybe 1/2 inch above the flues) and let the sucker freeze solid. I've been doing this for 25 years and have never had problems.

I've put a electric heater in my arch and set it on low good to go with the cold nights slushes but don't freeze solid. that just what I do.
