Which one is most useful to measure the boiling sap? Which one to measure the sap when it comes out of the tree?

If you like spending $$$, get a refractometer, otherwise use a hydrometer. Many guys like the gadgets and don't put their money toward things that will benefit them else where. There has been more syrup made with a hydro than refracto over the years. I really don't see how I've sugared for nearly 40 years without one!!

If your a small operator, there no need to buy a sap hydrometer or refractometer. If been making syrup most of my life and never used one. Of course, a Syrup Hydrometer is a necessity.

Thanks. I'm a small operation with 50 taps. Last 2 years I have just been going by temperature, look and taste to determine when its ready but I think I will get a Syrup Hydrometer this year.
