I'm doing all of my boiling on an outdoor grill, using steam pans. I can either leave the grill lid entirely up, which results in a slightly cooler pan and I'd guess a slightly less vigorous boil, but has the (maybe?) advantage of allowing the steam to blow away with the wind. OR I can lower the lid leaving only a 4" gap (can't close it all the way with the pans in), which results in what I think is a more vigorous boil, but then it's a hotter more enclosed spaced with less air circulating at the surface of the boil.
Any guesses as to which would be faster? Think there's any appreciable difference at all?
I could measure it, but it's tricky because there are a lot of other confounding factors.
