What's the difference between low and high vac? Other than the obvious (more vacuum), what advantages are there to using one or the other?
We have no problem with gravity, there's a 600 ft drop between the bush and sugar house. We're thinking about adding a vac for 2 reasons.
1. for days when the temp doesn't quite get high enough for a good run. I've heard from many local producers who run vac systems that even if the temp doesn't quite get high enough for a good run, under vac you can still get a good run. Is there any merit to this?
2. end of season clean up. Making the whole process easier. Right now we make 2 (1 to un-tap, 1 to plug the tap once we've flushed the whole system from the top) trips to each tap. If we were using a vac, we'd only have to make one.
