Our 2x6 maple pro, 2x4 raised flue flue pan evaporates about one half gallon per minute with a stack temp about 850 degrees.

I can do 40 -45 gallons per hour with a steam away on my 2*6 leader. 4'flue pan.
I run my rig a bit hotter at 1,100
The year I added the steam away my evaporation doubled however I also moved from boiling out side to inside...

You should get at least 30-35. It has the potential of upwards of 45-50 if it is run right and has hoods with preheater.

I have exactly what you have with a hood preheater home made gasification arch I can do 25/30 efficiently. Once I got to 35/40 sounded like a freight train coming through the wall I got scared and shut her down.

My Leader WSE 2x6 has a 2x4 flue pan. Are you sure yours is 2x3? I get 30 gph on a stock evaporator, stack temp 900-1000. See my old posts for ideas.

i have a 2008 leader 2x6 WSE with 2x4 flue pan i think either the earlier models or the last of the `king series` had 2x3 flue pans anyway i get 25/30 with just a hood and good wood, looking to add a preheater to bump it up some
