This will be my first year boiling on a Lapierre 2x5 Junior. Last year I boiled on a 18"x48" continuous flow flat pan with a pre-heater with around 100 taps and had a blast! I increased my tap count by a little more than double and purchased the 2x5 this past summer. Did a test boil with water today, quite the difference compared to the flat pan! If anyone has any advice or tips on operating this rig I'd love to hear it. I was running around 2 inches above the flues and about 2-1/2 inches in the syrup pan. Just wondering if that is the proper depth I should be running it while getting used to it. Thanks.

Once you get used to it, you should back down on the depth. The shallower it is the faster it will boil. Especially the back pan.
