Hey all,
I'm a small hobby guy and I mostly do marathon boils over the weekend.
I'm curious what's the longest you've held onto sap before boiling, assuming the weather is cold and keeping the sap cold?
I was hoping to have 60-80 gallons and boil this weekend but my plans may have been disrupted.
I believe I held some sap for 10-14 days last year and it was fine.
Thoughts?

A buddy of mine can only boil weekends (and not every one at that) and he has held sap for dam near 10 days without a problem. He kept it in the shade packed with snow and it was fine, still crystal clear.

yeah unfortunately i don't have much snow here in pittsburgh. it will be low 40's until next weekend though, when if you think about it is about the same temperature as a refrigerator.

I just boiled what I had this weekend. It was frozen but was in the barrel for three weeks.
I also only boil on the weekends. This will be my fourth year. I tap a little early to take advantage of the cold weather and have only had to toss sap twice due to spoilage. The sugar content will be lower the longer it sits. I have about 100 gallon sitting in a tote in the woods that hopefully turns into 300 by Saturday. Will let you know how I fare. Couple high 50 days his week.

I don't have any sap yet but I can give you as much snow as you want to carry back with you for refrigeration purposes :-) I'm sure the the DHS wouldn't give you too much of a hard time taking snow across the border ;-)
