Hey all
Apparently there exists a flavour chart and/or wheel, listing approx 90 acceptable flavours that maple syrup can have (apart, of course, from maple :-) For example every year my first batch is always very pale gold and has notes of vanilla and marshmallow. If I get black syrup it tastes almost like molasses.
Now, I know that this site is supposed to be on a Government of Canada site, probably in EnviroCan somewhere. But I've never found it.
Anyone out there have the link to this page? If so please PM me or post it here so we can share.
