Steam hood questions

[NW Ohio]

We are using a 2x4 hybrid pan and just installed a 3' by 4 1/2' steam hood about 9" above the pan. The steam stack is 10" diameter and 7 1/2' tall. Is 9" OK, and should the stack be taller?

Nice looking hood and preheater but it needs to be down tight to the pan. It will greatly improve your efficiency.
