Hi All,

My name is Anthony and I am new to the forum, I have been making my own syrup for about 7 years now and have done small upgrades every year to get to where I am now. This year I am building a new Arch as the current arch I use is simply an old modified oil tank. Last year I built two new pans out of 22 Gauge Stainless, a 2'-0" x 1'-6" finish pan and a 2'-0" x 2'-8" Back pan.

I was wondering about adding a third pan behind the back pan to add more surface area to hopefully increase production a bit. The new back pan would have four channels. Does anybody see a problem with adding a third pan and piping it with two 90 degree elbows into my existing back pan? I just want to figure out all this before I build my new arch.

I posted a picture of my current pans below.

Thanks in advance for the help!

So no problem adding a third pan? Or would you maybe recommend adding flues to my existing back pan? If so, what is the easiest way to go about adding flues to an existing pan?

No problem adding a third pan. If you can add flues I would recommend it. Greatly increases your surface area and in turn your evaporation rate. I had my pans built but below are a couple threads that may help you build your own.

So Maybe I should make my third pan a flue pan. Should I still put dividers in that pan?

Consider making back pan longer and adding flues.

Most, if not all, flue pans have at least one divider. Sketch your proposed pan with the dividers and see how the flow will go. If you are limited to a certain fill location, the flow pattern will dictate where the outlet will be. It's gotta work for your location.
