I have 2 saplings about 1-2-3" around. I was debating whether or not to try the cut the top off and connect it to my lateral some how. Question, what is the best way to do this and what parts & pieces do i need?

The "sap caps" are not yet commercially available.

I watched a couple of the UVM videos and read an article, thought it was a pretty neat idea. Could be the next big thing, thanx Doc.

From what I understand the saplings have at least 2 shoots so you are not capping the entire tree just one of the shoots? I think the caps have rubber collers around the tree and tubing with adjustable hose clamps and a bag between the tree and the tube to act as an adapter between the tree and sapling. The tricky part is some sort of mesh or screen in the bag to prevent the bag from collapsing under the air pressure due to the vacuum. Total guess though. Something like this seems plausible though.

What about using used IV bags? They are available (Amazon and others) and are already plumbed for a 3/16th barb fitting. Cut the top off and use a hose clamp?

Check this thread from last year...I found a sapling with sap pouring out of it. Maybe you could hang a bucket under one of these and call it a day.
