Anyone know what gauge stainless they use on them?

Depending on size 20 or 22 gauge.

Depends on type of tank. Some of my round bottom dairy tanks are 14 gauge and some of the larger ones are 12. There are round bottom tanks made just for sap that are about half that thickness
