Has anyone ever saved their sweet water until the next season? It takes so much sap to start up every spring, that I thought if I could freeze the twenty five gallons until the next season, we could hit the spring running. I have space in a walk in freezer.

what would you gain? its the same amount of syrup weather its made this year or next!

Be grateful...that 2x6 should only take around 70-100 gals to sweeten...mine takes about 1200...

Are you worried about wasting the last bit of sweet? Push the sweet with distilled/ro water. If its for your personal consumption use well water. Then all of your sap is turned into syrup.
