looks to me like it might be a level and preheat control for an evaporator. Maybe you should ask him about the web sight he found his information on.

It looks to me to be a syphon system like my father and grandfather used to use. If I am right this would be used between the pans and it would siphon from pan to pan. Although ours was a little different as ours had a nipple on top to suck the sap up threw to start the siphon. It would get really interesting when you would lose the siphon in the boil and have to suck hot sap up into it. I don't know why my dad and grandfather didn't end up with 3rd degree burns as I saw them spit out hot sap many a time. Thank god that the evaporator companies came up with a better system than that when I took over

Although I have never seen one I was going to say it was a crossover pipe. I worked with a guy when I was a kid that said he could only draw syrup off one side of his evap because someone had gotten in the sugarhouse and stolen the crossover pipe.

maybe this is the stolen one and anyone buying it would be receiving stolen property!
