Its an old silverware holder. will drill holes to connect each channel?

Seams look like they are caulked. This would not be good if that is the case.

Caulked or soldered?..What may have me concerned is what type of solder was used for joints. Looking at this on line..haven't purchased it.

it will not have the same surface area as a flat or boxed pan but I guess it will work.

I'm a newbie sugar-er. I see the fancy ones with troughs/ channels..seeing how I'll have 30-40 taps my first season and a Homemade arch If i had 2 -4" deep pans 13x 22 behind this one plumbed together with a draw off tap on the front pan. Or just use 3 or 4 boxed pans.

The issue with drilling it will be the void between the troughs(sp?). I believe you will find that there is an inch or two of dead space between each section.

That same void under the troughs will keep heat from easily reaching the sap-that's a deal breaker right there. Could the bottom be removed, to expose the troughs to direct heat?

Ipakiz..another good point..I believe its welded around the troughs like a skin..probably where the strength is in the piece too..good catch!

As I look at the pan from the top, I see rounded channels, looking from the bottom, it is flat, therefor you likely have hidden voids and a double bottom skin. As such you will not get good heat transfer between the bottom and the sap. I think you want to find something that is single layer and food grade.
