Depends on the time you have. But i would just stick with the flat pan/batch boiling. Boiling/collection for 30-35 taps should still be possible with a full time job and whatever your everyday life throws at you.

What size is your flat batch pan. I would assume anything 2x2 or bigger will be enough if you can boil most evenings.
My 2 x 2.5' Half pint (flat) worked fine for my 30 buckets. I could boil a typical day's sap in 2-4 hrs after work, usually needing a 12 hr weekend day once or twice a year to catch up when there is a big run.

thank you all for great advice ,as it turns out a friend of mine happened to have a evaporator that he has not used in years and said I could use it , the bottom looks a little scorched but haven't tried to clean it yet so we will see , it is a 2 divider , 3-bay evaporator aprox. 2'x4' so am going to try that seeing as it is free , thanks again for info any other advice for a newbie 2nd year syrup maker would be great .

Free is good! Get some more buckets as that rig should handle it easily and may be looking for more. Yes does depend on the time you have.
