View Full Version : Upgrading a 2x2 flat pan

My 2x2 flat pan (no dividers) was maxed out last season and I made only two gallons of syrup. This year I would like to get its gallon per hour rate larger than about 2-4 gallons per hour (last year). I would like to add dividers or something to get its gallon per hour rate up. Any ideas?

Adding dividers will not increase the boiling rate. A larger pan is needed. You could boost your evaporation rate slightly with some sort of a preheater.

Your pans capacity to boil can be directly related to the pan bottom surface area. At 2' multiplied by 2' you are meeting the pans capacity of 4 gph.

What they said^^ If you cant afford to buy on another pan, perhaps improvements on your evaporator could be made to increase heat? Better insulation or some sort of blower.. just my thoughts. Otherwise, getting a bigger pan is next in line.

What type of arch are you using? Block, barrel, wood propane???

It's a propane evaporator.

Just a turkey cooker under the pan or an actual arch?

It's on a homemade stand around three feet tall of 1" metal as a frame and roof tin on the sides with a propane burner.

How about replacing the bottom of the pan with copper? A 2x2 sheet would cost around $150. Maybe leave a 1/2" lip around the bottom to weld or solder the copper sheet on.
The heat transfer rate is much higher. I dont have any numbers on the change in boil rate though. In all the threads on copper pans, very few people have posted their evap rate.
