No. You don't have a way of heating or maintaining the heat on this style of unit safely without a large build project that will cost as much as a commercial canner in the end and will not be as safe.

You want a unit that even a kid can operate without risk of being burned. Your hand that close to the unit will become rather hot in short order.

I solute your ingenuity but suggest safety as a decision factor in all investments.

I drilled holes in the top of mine, filled the jacket with water and turned it into a water jacketed bottler. Worked great.
