When I was a firefighter we used fold up water tanks that were easily carried by two people. Could we use one of these tanks with a food grade liner to hold sap? Dura-Skrim is a product I quickly found online. I am not promoting this product. You could use any fine food grade product on the market, but this is a good example of a food grade material that is even organic certified. If you made more than one liner per tank clean up would be a breeze. Just remove one liner for cleaning and install the cleaned liner, and your back in production. When the season is over you fold up your tank and put it away safe till next year. What are your thoughts on this ? Has anyone done this ? Well I think that is a sweet idea. I cant think of any reason other than wanting to keep debris from falling into the sap, that would impede the use of these for sap tanks.

Many of the new sap tanks I see are open top for easy cleaning. Do you know of anyone who is using something like this?

Back during the lead scare in the mid-1990s there were a few such products available (for those with lead-soldered storage tanks). They worked OK. Problems we had were cleaning (the surface is not nearly as smooth as a SS tank), drain fittings (leakage around the fittings) and the fact that mice liked to nibble on them, which rendered them useless afterward. Whether they could be organic-certified would depend upon the certifying agency. So all in all, they might be a reasonable temporary solution, but for the long-term, hard to beat a good stainless tank.
