I was asked this recently while making candy at the Big E. I like the set up of the Lapierre machine, it feeds in line with the trough. If I could get Leader to build me a machine that feeds in line with the trough I'd buy it in a heartbeat. Leader makes the best pig as far as I am concerned. The shut off on the snout is superior to all. So---If I had it my way, it would be Lapierre machine with Leader pigs.

I have a lapierre, it works fine and has a cleaner look than most others I looked at. Also works well for cream in small batches.

I opted for the Leader because I liked the trough perpendicular to the pig. It seems like it's easier to fit on a standard counter that has a back wall. It seems like the Lapierre has to be used on a table top because the back of the pig to the end of the trough is long. Is that right?
