I am planning on somehow pre heating the sap before the evaporator. Problem is the height of the hood and or stack. My holding tanks are lower than the assembly and have already built a permanent stand for the two poly tanks. Still learning so thought I would ask the experts.

If your holding tanks are below your evaporator, many make use of a head tank. The head tank is a much smaller tank or barrel placed higher than the evaporator and you pump your sap into it from the collection tank. Depending on the size of the tank and your boil rate, the pump kicks on and refills the head tank once or twice an hour. The pump is not in continuous use.
Then once you have sap up above the pans you can do whatever you want with it because gravity is working for you now. Since you have a hood, your best bet is to get a preheater and drip pan under the hood. There are a ton of threads on preheaters.
Good luck,
Sean
