What do you use to coat maple sugar candy? And how do you do it?
Any input would be appreciated. Thanks.

A local sugarmaker heats heats syrup to 4 degrees above normal syrup density and then cools it. You put the candy in a steel mesh basket and dip it into the syrup over night. Let it drain and you are done. It gives the candy a much longer shelf life.
